Spelt and cherry salad

Emmer wheat salad is both sweet and salted. Cherries can be replaced with other season fruits

Ingredients

100 g of spelt

150 g of cherries

1/4 cucumber

10 g of salted ricotta

salt and pepper

extra virgin olive oil

Cook the spelt al dente. Drain it and let it cool. Meanwhile, wash cherries, pit and cut them to little pieces. Wash a cucumber and cut a piece of it. Mix together spelt, cherries and cucumber. Add salt, pepper and oil. Crumble some salted ricotta on the salad. Serve at room temperature to fully enjoy the spelt and cherry salad.
